Gluten-Free Buttermilk Cornbread

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 tsp baking soda
  • 1 cup gluten-free flour mix
  • 1 cup cornmeal
  • 1/8 tsp salt

Instructions

  1. Butter an 8 x 8 baking pan.

  2. Preheat oven to 375 degrees Fahrenheit.

  3. Melt butter in the microwave in a large mixing bowl.

  4. Stir in sugar and eggs. Mix until well blended.

  5. In separate small bowl, mix buttermilk and baking soda. Stir into the butter mixture.
  6. Mix in gluten-free flour mix, cornbread and salt. Stir until blended.

  7. Pour mixture into prepared baking pan.

  8. Bake in preheated oven for 35-40 minutes. Toothpick inserted in the middle should come out clean.
